As Mild Steel is slightly porous, after the seasoning/sealing process and providing you apply a coating of vegetable oil after use, very little will stick to the plate. The Plate will turn blackish in colour directly above the burners where most of the heat is concentrated.
This is normal carbonization. The Outer Perimeters of the plate will not get as hot as the middle but this is generally used for warming or resting the food. The plate will not remain shiny and 'new looking' as its not meant to. The Mild Steel Plate is a much better conducter and retainer of heat than the Optional Stainless Steel Plate.
